Why it matters

Order data stuffed into custom fields is not commerce support.

The common workaround is to flatten purchase history into contact attributes: last order date, lifetime value, maybe a product name. It is enough for a coarse segment and useless for anything else — you cannot branch on what someone bought, or attribute revenue to the flow that caused it.
